A margarita in cupcake form? Someone knows the key to our hearts!

This recipe is perfect for Cinco de Mayo, but we don’t need an excuse — we’d eat them any time! It uses boxed cake mix, which simplifies the process, but don’t be afraid to swap that for homemade white cake if you’d prefer.

You will need:

Cupcakes

  • 1 box white cake mix
  • 3 large eggs
  • ½ cup vegetable oil
  • 1/3 cup lime juice

  • 1/3 cup tequila
  • 1 tablespoon lime zest
  • 1/3 cup buttermilk

Frosting

  • 8 ounces cream cheese
  • ½ cup unsalted butter
  • 2 cups powdered sugar
  • 2 tablespoons lime juice
  • 1 tablespoon tequila
  • ½ tablespoon lime zest
  • Green food coloring

Brush your baked cupcakes with tequila; then, once they’re frosted, “rim” them with sanding sugar to complete that margarita effect.
