The classic banana-pineapple spice cake, better known as hummingbird cake, is one of the most popular recipes in Southern Living’s history.

Now, the magazine has taken the love a step further with this creation — hummingbird oatmeal cookies!


Sure, they’re a little more complicated than the standard oatmeal cookie, but that just means you’ll enjoy them more!

You will need:

  • 2 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup brown sugar
  • 1 cup butter
  • 1 teaspoon vanilla
  • 2 eggs
  • ½ ripe banana, mashed
  • ½ cup oats
  • 1 cup pecans, chopped
  • ½ cup dried pineapple, chopped

Slather the finished cookies in cream cheese icing. Here’s what you’ll need for the one used on the hummingbird cake:

  • 16 ounces cream cheese, softened
  • 1 cup butter, softened
  • 32 ounces powdered sugar
  • 2 teaspoons vanilla

Then, top them with chopped banana chips, pecans and toasted coconut!
