It’s fitting that Pavlova was named after a Russian prima ballerina. Anna Pavlova was beautiful, delicate, and ethereal — just like the treat that bears her name.

Pavlova, which was invented in either Australia or New Zealand (both countries take credit for it), is made from egg whites and sugar, and is often topped with fruit, sorbet, or ice cream. Try this lemon blueberry version for a true taste of summer.

You will need:

  • 6 egg whites
  • ⅛ teaspoon cream of tartar
  • Pinch of salt
  • 1½ cups sugar
  • 1 teaspoon lemon juice
  • ¼ teaspoon lemon extract
  • 2½ teaspoons cornstarch

Fill your Pavlovas with lemon curd, then top the entire creation with fresh berries.
