Pavlova, which was invented in either Australia or New Zealand (both countries take credit for it), is made from egg whites and sugar, and is often topped with fruit, sorbet, or ice cream. Try this lemon blueberry version for a true taste of summer.

- 6 egg whites
- ⅛ teaspoon cream of tartar
- Pinch of salt
- 1½ cups sugar
- 1 teaspoon lemon juice
- ¼ teaspoon lemon extract
- 2½ teaspoons cornstarch
