This Cooking Light recipe shows you how to make Parmesan chickpeas. They’ll remind you of cheesy potato chips, but they’re also healthy — loaded with protein, fiber, and certain vitamins and minerals.

You will need:

  • 1 can unsalted chickpeas, drained and rinsed
  • 2 tablespoons olive oil

  • 2 tablespoons finely grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon lemon rind, grated
  • ½ teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
