We love soup, but so many canned versions are loaded with preservatives and other ingredients we can’t pronounce. Why rely on them when it’s so easy to make soup at home, either in the slow cooker or on the stove?

This lemon chicken and orzo soup is light, so it can be eaten year-round, and it’s also ridiculously healthy. Plus, every ingredient is natural, and it cooks in minutes. What’s not to love?

You will need:

  • 2 tablespoons olive oil
  • 1 pound chicken breasts, diced
  • ½ cup white onion, diced
  • ½ cup celery, diced
  • ½ cup carrots, sliced
  • 5 cloves garlic, minced
  • 1½ teaspoons fresh oregano
  • 7 cups chicken broth
  • 1 Parmesan rind
  • 1 cup orzo
  • 5 ounces fresh spinach
  • ⅓ cup lemon juice
  • Salt and pepper
