Here’s a slightly more grown-up version of that classic. The cheese is homemade — and yes, you can make American cheese in your own kitchen. In fact, it’s probably easier than you think. All that’s missing is a bowl of tomato soup to go with it!

  • ½ cup plus 2 tablespoons whole milk, divided
  • 1 teaspoon gelatin
  • 8 ounces mild orange cheese (such as Colby), shredded
  • ¾ teaspoon salt
  • 1 tablespoon unsalted butter
