As a working mother of two, I know how difficult it can be to feed the kids a good, nutritious breakfast before they leave for school or daycare in the mornings.

But these delicious breakfast muffins can be made in advance and frozen. All you need to do is thaw them overnight, heat them up in the morning, and hand them to the kids as you head out the door.

You’ll need:

  • Frozen tater tots or hash browns
  • 14 eggs
  • ½ cup diced green pepper, cooked
  • ½ cup shredded cheese
  • ½ cup diced ham
  • ½ cup milk
  • Salt and pepper

And don’t forget about my make-ahead dinners! All of them are delicious, healthy, and can be frozen for up to six months — perfect for busy families!
