These look amazing!

You’ll need:

  • 1 tomato
  • 1 ear of corn
  • 2 tsp olive oil
  • 2 scallions
  • 1/2 jalapeno (optional)
  • Can of drained black beans
  • 1/2 cup grated cheddar cheese
  • 1/4 cup bread crumbs
  • salt and pepper
  • Lime juice

Preheat your oven to 450.

Start by hollowing out a tomato, leaving it thick enough so that it doesn’t completely fall apart. Then, take an ear of corn and cut it off the cob, then sautée it with olive oil and scallions. Add jalapeno.

Combine in bowl with black beans, 1/4 cup cheese, half of your bread crumbs, salt and pepper and lime juice. Fill your tomatoes. Mix together the rest of your bread crumbs and cheese and sprinkle on top of your tomato, then drizzle with olive oil.

Bake for 10 minutes, then uncover and back for another 5.
