Girl Scout Cookie season has arrived in some areas and is right around the corner in others. To get you excited, here’s a simple and delicious recipe for Thin Mint truffles.
You will need:
1 box Thin Mint cookies
4 ounces fat free cream cheese, slightly softened
1 container microwavable white chocolate
Green food coloring
In a food processor, pulse the Thin Mints a few times, then blend them down until they are crumbs. (It might be easier to do this in two batches.)
Mix the crumbs and cream cheese in a bowl until well incorporated. Roll the mixture into 1-inch balls and place them on a wax paper-covered baking sheet. Place the sheet in the refrigerator for about 30 minutes.
Once the truffles are chilled, melt the chocolate and color it green. Dip the truffles in the melted chocolate.
This recipe makes about 24 truffles.
If you don’t have Thin Mints, you can also use Keebler Grasshopper cookies (or just make your own Thin Mints).
