This is one of my favorite go-to recipes, I call it “Chop and Drop Chicken and Vegetables.”

It’s so good and easy, you can usually whip it together using whatever you already have in the kitchen.

You’ll need:

  • Chicken breasts
  • Chopped yellow summer squash (or zucchini or eggplant or broccoli really any of your favorite veggies)
  • Purple onion
  • Cherry tomatoes
  • Fresh basil
  • Limes
  • Olive oil
  • Salt
  • Pepper
