This delicious lemon-glazed bread is actually packed with zucchini, which boosts eyesight, wards off diseases and can even help us lose weight. (For what it’s worth, zucchini is technically a fruit, but it’s prepared like a vegetable — and it’s even displayed with vegetables in the supermarket. As far as we’re concerned, it contributes to our daily quota of veggies.)

You will need:
Bread
- 2¼ cups all-purpose flour
- ½ teaspoon salt
- 2 teaspoons baking powder
- 2 eggs
- ¼ cup canola oil
- 1 cup sugar
- 2 tablespoons lemon juice
- Zest of 1 lemon
- ½ cup buttermilk
- 2 cups shredded zucchini
Lemon glaze
- 1 cup powdered sugar
- 2 tablespoons lemon juice
- 1 tablespoon milk
