There’s nothing quite like enjoying a slice of lemon cake with our morning coffee.

But what if there was a way to eat our cake and get a serving of vegetables at the same time?

This delicious lemon-glazed bread is actually packed with zucchini, which boosts eyesight, wards off diseases and can even help us lose weight. (For what it’s worth, zucchini is technically a fruit, but it’s prepared like a vegetable — and it’s even displayed with vegetables in the supermarket. As far as we’re concerned, it contributes to our daily quota of veggies.)

You will need:


  • 2¼ cups all-purpose flour
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • 2 eggs
  • ¼ cup canola oil
  • 1 cup sugar
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • ½ cup buttermilk
  • 2 cups shredded zucchini

Lemon glaze

  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon milk
