Everyone loves brownies, but some are clearly superior to others. The addition of espresso powder gives these brownies a special kick.
The great thing about brownies is that once you make the batter, you’re pretty much done! There aren’t multiple steps involved, which makes brownies an easy favorite to whip up in no time at all.
Add some hot fudge and ice cream to these to make them even better.
- 1 tsp instant espresso powder (dissolved in 1 tbsp hot water)
- 1 tbsp hot water
- 2 whole eggs
- ⅔ cup cocoa powder
- ½ tsp salt
- ½ tsp baking powder
- 1 tsp vanilla extract
- ½ cup unsalted butter
- 1 cup sugar (we use demerara but brown or regular works fine)
- ¾ cup all-purpose flour
- 200 g (a little under 8 oz) roughly chopped up chocolate *use something that you enjoy eating plain
- ½ cup chopped nuts (walnuts are great, so are peanuts, pecans or almonds)
