We think eggplant is underrated. It’s a good source of vitamins and antioxidants, and it can be used in many dishes in place of fattier ingredients.

This simple tutorial shows how to use eggplant in place of dough while making mini pizzas. This particular recipe also uses crushed tomatoes instead of sugar-laden pizza sauce.

You will need:
1 eggplant
1 tablespoon olive oil
3 cloves garlic, minced
1 can crushed tomatoes
¼ teaspoon dried basil
½ teaspoon Italian seasoning
Mozzarella and fresh basil (but feel free to get creative with your toppings)

Tip: Brush the sliced eggplant with olive oil, and season it with salt and more Italian seasoning.
