Broccoli is one of the healthiest foods out there. It helps our bodies detoxify, it’s a good source of vitamins and, best of all, it’s delicious — even President Obama is a fan!

But a popular method of cooking broccoli may be removing some of those nutritious compounds.

According to Dan Souza, author of The Science of Good Cooking, simply dropping a head of fresh broccoli in a pot of boiling water is one of the worst ways to prepare it, as it kills many of the vegetable’s nutrients, including vitamins B and C.

Instead, broccoli should be cooked in a microwave. “You’re essentially steaming it inside there,” Souza said. “There’s really no place for nutrients to go. It stays in the vegetable.”

And it’s also much faster than waiting for a pot of water to boil on the stove.

According to Souza, this is the perfect way to prepare broccoli:

  1. Fill a large glass bowl with broccoli.
  2. Add a tablespoon of water to the bowl.
  3. Cover the bowl with a plate.
  4. Microwave on high for a few minutes.
