Her freezer-ready meatloaf is the perfect easy dinner for busy parents and hungry kids alike

As a working mother of two, I know how difficult it can be to whip up an entire nutritious dinner for my family every single night.

That’s why I’m making a series on meals that can be prepared in advance and frozen. All you need to do when you get home after a long day is take dinner out of the freezer and pop it in the oven. It couldn’t possibly be easier.

First, I made healthy and delicious stuffed peppers. Now, I’m going to whip up a favorite of dads across the country — meatloaf.

You’ll need:

  • 1½ pounds ground beef
  • Worcestershire sauce
  • ½ teaspoon ground mustard
  • ½ teaspoon garlic powder
  • 1 teaspoon fresh sage
  • 1 cup panko
  • 1 cup milk
  • 1 green onion, chopped
  • 2 eggs

As you’ll see, it’s best to get lean ground beef, as the fattier kind tends to leave a lot of oil behind when the meatloaf cooks.

This meatloaf can be frozen for up to six months. Put it in the refrigerator to thaw the night before you plan to eat it, then cook it at 350 degrees for 60 minutes.
