Here’s a simple latke recipe from Chef Lauren Brown of Brown’s NY Deli in Maitland, Fla.
You will need:
5 large potatoes, peeled
1 cup pureed onion
4 eggs, beaten
3 tablespoons flour
¼ teaspoon black pepper
1 teaspoon kosher salt
Vegetable oil for frying
Use a food processor’s grater attachment to grate peeled potatoes.
Take 1/3 of grated potatoes and puree with food processor’s bottom blades. Mix with onion puree immediately so potatoes don’t turn brown. Let stand, then drain.
Add remaining ingredients except oil; heat oil in pan.
Take handful of potato mixture and form patty. Cook on one side until brown, then flip and cook until brown. Remove patty from pan and drain on paper towel.
Repeat with remaining ingredients.
Serve latkes with applesauce and sour cream.
