Not only does this cake from Country Living look like a robin egg, it’s the perfect flavor for spring — malted coconut!

You will need:

Cake

  • 3 cups cake flour, spooned and leveled
  • 1½ teaspoons baking powder

  • ¼ cup malted milk powder
  • 1 teaspoon salt
  • 1 cup canola oil
  • 1 cup half and half, room temperature
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 large egg, room temperature
  • 2 large egg whites, room temperature

Coconut buttercream

  • 1 cup unsalted butter, room temperature
  • ½ cup cream of coconut
  • 6 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Blue gel food coloring
  • Brown gel food coloring
